Ing. Prof. Linda Dari, a distinguished Associate Professor in Food and Postharvest Engineering in the Department of Agricultural Engineering, School of Engineering, has a PhD. and MSc. in Food and Postharvest Engineering from the Kwame Nkrumah University of Science and Technology (KNUST) and BSc. in Agriculture Technology from the University for Development Studies (UDS), is renowned for her impactful contributions to agricultural research in Ghana. With a background in engineering, she has researched in areas such as nutrient analysis, food product development, food safety and food security, postharvest technologies, such as using the Zero Energy Cooling Chamber (ZECC) and cabinet dryers for perishables (fruits and vegetables) preservation and storage in collaboration with the AVRDC/World Vegetable Centre, the training of value chain actors in the appropriate handling of agri produce and food, the training of women in the food and shea sector on appropriate health and safety for ideal food enterprises, and advancing sustainable land management practices. This showcases her dedication to innovative and sustainable agricultural and food practices. Ing. Prof. Dari actively contributes to ongoing projects, notably the DeClaRe initiative focusing on sustainable land management in West Africa as a Principal investigator for the Food Technology option and a member of the African Postharvest Losses Information System. Ing. Dari handles courses such as Food Engineering, Food Plant Design, Food and Produce Packaging, Food Science, Safety and Quality Assurance, and Postharvest Handling of Durable and Perishable Crops.
Beyond research, Ing. Dari professional organises and mentors students especially females through the Women in Engineering (WinE) where she doubles as the WinE coordinator for Branch 5, Women in Science, Technology, Engineering and Mathematics (WiSTEM) as a founding member for the UDS Branch, Organisation for Women in Science for the Developing World (OWSD), the Ghana Institution of Engineering and the Ghana Institution of Horticulturist. Her contributions are geared towards impactful work, which underscores her commitment to advancing sustainable agricultural practices and shaping agricultural development in Ghana.
